Ingredients
- 3 medium russet potatoes
- 2 tablespoons olive oil
- 2 tablespoons butter (softened)
- 2 cups shredded cheddar cheese (divided)
- 1 cup sour cream
- 2 slices cooked bacon (crumbled)
- Garlic powder, onion powder, salt, and pepper
Instructions
- Wash and dry the potatoes. Brush with olive oil and sprinkle with salt. Poke holes in each potato.
- Preheat the air fryer to 400ºF (204ºC). Cook the potatoes for 30 minutes, flipping halfway through.
- Let cool for 10 minutes; cut each potato in half and scoop out most of the flesh.
- In a bowl, mash the scooped potato with butter, sour cream, spices, and 1.5 cups of cheese until smooth.
- Fill potato skins with the mixture, top with remaining cheese and bacon bits, then return to the air fryer for an additional 5-7 minutes until heated through.
