  • 2 cups grated zucchini

Instructions

  1. Preheat your oven to 325°F (163°C) and grease two loaf pans.
  2. Grate the zucchini and dice the apples; set aside.
  3. In one bowl, mix flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, beat eggs until fluffy; add oil (or applesauce), vanilla extract, white sugar, and brown sugar.
  5. Combine wet and dry ingredients without overmixing.
  6. Fold in grated zucchini, diced apples, and walnuts; let rest for 5 minutes.
  7. Pour batter into prepared pans and bake mini loaves for 35-40 minutes or full-sized loaves for about 55 minutes until a toothpick comes out clean.
  8. Cool in pans for 20 minutes before transferring to wire racks.
