  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
  2. Grate the zucchini and dice the apple.
  3. In a large bowl, combine flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, mix eggs, oils, sugars, and vanilla until blended.
  5. Combine wet and dry ingredients without overmixing.
  6. Fold in zucchini, apple, and walnuts; let sit for 5 minutes.
  7. Pour batter into prepared pans and bake: mini loaves for about 35-40 minutes; full-sized loaves for approximately 55 minutes.
  8. Cool in the pan for about 20 minutes before transferring to wire racks.
