  • 4 skinless, boneless chicken breasts (about 1 ½ lb)
  • 12 asparagus stalks, trimmed
  • 1 ounce sun-dried tomatoes, chopped
  • 4 slices mozzarella cheese
  • Olive oil
  • Italian seasoning mix
  • Garlic powder
  • Smoked paprika
  • Sea salt
  • Pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Carefully cut pockets into each chicken breast without cutting all the way through.
  4. Roll three asparagus stalks with some sun-dried tomatoes inside each slice of mozzarella.
  5. Stuff the chicken breasts with the mozzarella-asparagus rolls and secure openings with toothpicks.
  6. Heat olive oil in a cast-iron skillet over medium-high heat and sear the stuffed chicken for 3–5 minutes per side until golden brown.
  7. Transfer skillet to oven and bake for 15–20 minutes until internal temperature reaches 165°F (74°C).
  8. Remove toothpicks before serving.
