  • 68 chicken drumsticks
  • 1 cup uncooked white rice
  • 1 and 1/3 cups low-sodium chicken broth
  • 1/2 medium yellow onion (chopped)
  • 34 cloves garlic (minced)
  • 3 Tablespoons olive oil
  • 2 Tablespoons brown sugar
  • 1 Tablespoon smoked paprika
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 and 1/2 teaspoons kosher salt (divided)
  • 1520 cranks fresh-ground black pepper
  • 2 Tablespoons butter
  • 2/3 cup water
  • 1 lemon (cut into wedges)
  • fresh parsley or thyme (optional garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix olive oil, brown sugar, smoked paprika, thyme, oregano, garlic powder, salt, and pepper to form a paste. Rub over chicken drumsticks.
  3. Sauté onion in butter until softened; add garlic briefly before transferring to a baking dish.
  4. Add rice and salt to the baking dish; stir well.
  5. Boil chicken broth and water in the saucepan; pour over rice mixture.
  6. Place seasoned chicken on top and add lemon wedges around it. Cover with foil.
  7. Bake for 30 minutes covered; then remove foil and bake for another 20 minutes until cooked through.
