Ingredients

  • 2 lbs chuck roast, cut into ¾-inch cubes
  • 3 tablespoons olive oil
  • 1½ cups chopped carrots
  • 1 cup chopped celery
  • 2 cups chopped yellow onion
  • 3 tablespoons tomato paste
  • 1½ tablespoons minced garlic
  • 2 cartons (32 oz each) low-sodium chicken or beef broth
  • 1 tablespoon low-sodium soy sauce
  • 1 cup pearl barley
  • Fresh herbs for garnish (parsley, rosemary)

Instructions

  1. Heat olive oil in a large pot and sear seasoned beef until golden brown. Remove and set aside.
  2. In the same pot, sauté carrots, celery, and onions until softened. Add tomato paste and garlic; cook until fragrant.
  3. Return beef to the pot and add broth, soy sauce, herbs, salt, and pepper.
  4. Simmer on low heat for about 45–60 minutes until beef is tender.
  5. Stir in pearl barley and simmer for another 45–60 minutes until both barley and beef are soft.
  6. Garnish with fresh parsley before serving.
