  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 10 oz enchilada sauce
  • 14.5 oz diced tomatoes, drained
  • 15 oz black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef with diced onion and minced garlic until browned; drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. Layer half of the tortillas in the baking dish, then half the beef mixture followed by half the cheese. Repeat layers and top with remaining cheese.
  5. Bake for 25 minutes or until bubbly and golden brown. Let rest before serving.
