Ingredients
- 2.5 kg (5 lb) standing rib roast (bone-in)
- 150g (10 tbsp) unsalted butter
- 5 garlic cloves, minced
- Fresh rosemary and thyme
- Salt and pepper
- Low-salt beef broth
- 1 onion, unpeeled, quartered
- 1 head of garlic, unpeeled, halved horizontally
- 5 sprigs thyme
- 3 sprigs rosemary
Instructions
- Preheat your oven to 325°F (160°C).
- Remove the rib roast from the fridge to reach room temperature (about an hour).
- Season generously with salt and pepper.
- Mix softened butter with minced garlic and herbs; coat the roast thoroughly.
- Place quartered onion and halved garlic in a roasting pan; place the roast on top.
- Insert a meat thermometer into the thickest part of the meat and roast until it reaches an internal temperature of 130°F (54°C) for medium-rare.
- Rest the roast for at least 20 minutes before carving.
