Ingredients

  • 4 egg yolks (or 4 egg whites)

  • 1 tsp vanilla extract
  • Pinch of salt

  • ~30 ladyfingers
  • 1 1/2 cups strong black coffee
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew and cool the coffee.
  2. In one bowl, blend mascarpone, sugar, vanilla extract, and salt until smooth.
  3. In another bowl, whip heavy cream (or egg whites) to stiff peaks, then fold into the mascarpone mixture.
  4. Dip ladyfingers briefly in coffee and layer them in a baking dish.
  5. Spread half of the mascarpone mix over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and remaining mascarpone mix.
  7. Cover and refrigerate for at least four hours before serving; dust with cocoa powder just before serving.
