  • ¾ cup (1½ sticks or 170g) unsalted butter
  • ½ cup (140g) cookie butter spread
  • 1 cup (200g) brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1¼ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ⅔ cup (130g) white chocolate chips
  • 68 Biscoff cookies
  • 2 Tablespoons (35g) cookie butter spread

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9” x 9” square pan with parchment paper.
  2. Melt the butter and let it cool slightly.
  3. In a mixing bowl, combine melted butter, cookie butter, brown sugar, and granulated sugar. Whisk until smooth.
  4. Add eggs and vanilla extract; mix until combined.
  5. Gradually add flour, baking powder, salt, and cinnamon until just mixed.
  6. Fold in white chocolate chips gently.
  7. Pour batter into the prepared pan and top with broken Biscoff cookies.
  8. Bake for 30–35 minutes until golden brown; cool completely before serving.
