  • 1 cup uncooked quinoa
  • 2 cans (15 oz each) black beans
  • 1/2 cup sliced green onion
  • 1 cup chopped cilantro
  • 1 cup crumbled cotija cheese
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 shallot (minced)
  • 1 Tbsp honey
  • sea salt
  • black pepper

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water). Cook according to package instructions until fluffy, then set aside.
  2. In a large bowl, mix lime juice, olive oil, minced shallot, honey, salt, and pepper. Whisk until well combined.
  3. Drain and rinse the black beans. Chop the cilantro finely.
  4. Fluff quinoa with a fork and add it to the vinaigrette mixture. Stir in black beans, cilantro, and cotija cheese gently until combined.
  5. Chill in the refrigerator for at least one hour before serving.
