- 2 cans (15 oz each) black beans
- 1/2 cup sliced green onion
- 1 cup chopped cilantro
- 1 cup crumbled cotija cheese
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 shallot (minced)
- 1 Tbsp honey

Instructions
- Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water). Cook according to package instructions until fluffy, then set aside.
- In a large bowl, mix lime juice, olive oil, minced shallot, honey, salt, and pepper. Whisk until well combined.
- Drain and rinse the black beans. Chop the cilantro finely.
- Fluff quinoa with a fork and add it to the vinaigrette mixture. Stir in black beans, cilantro, and cotija cheese gently until combined.
- Chill in the refrigerator for at least one hour before serving.
