  • 3/4 cup buttermilk
  • 12 tablespoons unsalted butter (8 cold cubed + 4 melted)
  • 1 cup fresh blueberries
  • 1 cup powdered sugar (for the glaze)
  • 1 teaspoon lemon juice (for the glaze)
  • 1 tablespoon milk (for the glaze)

Instructions

  1. Preheat the oven to 475°F (245°C).
  2. In a large bowl, mix flour, baking powder, and salt.
  3. In another bowl, whisk together buttermilk and sugar.
  4. Cut cold butter into the flour mixture until it resembles small peas.
  5. Combine buttermilk mix with flour-butter mix until just combined.
  6. Toss blueberries in flour then gently fold into the dough.
  7. Roll out dough on a floured surface; fold over several times to create layers.
  8. Cut biscuits using a biscuit cutter; place them touching in a cast iron skillet.
  9. Bake for about 10-12 minutes until golden brown.
  10. Cool slightly before glazing with a mixture of powdered sugar, lemon juice, and milk.
