  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 cups blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350ºF (177ºC) and line an 8" x 8" baking pan with foil.
  2. In a bowl, combine melted butter, ½ cup sugar, lemon zest, salt, and flour until crumbly. Press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and remaining sugar until smooth. Add eggs, yogurt, lemon juice, and salt; mix until creamy.
  4. Gently fold in blueberries and pour over the crust.
  5. Bake for about 30-35 minutes until set but slightly jiggly in the center. Cool completely before slicing.
