Ingredients
- 1 cup unsalted butter (melted)
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 8 ounces cream cheese (softened)
- 1 cup granulated sugar
- 2 large eggs
- 3 cups blueberries (fresh or frozen)
Instructions
- Preheat the oven to 350ºF (177ºC) and line an 8" x 8" baking pan with foil.
- In a bowl, combine melted butter, ½ cup sugar, lemon zest, salt, and flour until crumbly. Press into the bottom of the prepared pan.
- In another bowl, beat cream cheese and remaining sugar until smooth. Add eggs, yogurt, lemon juice, and salt; mix until creamy.
- Gently fold in blueberries and pour over the crust.
- Bake for about 30-35 minutes until set but slightly jiggly in the center. Cool completely before slicing.
