  • 1/2 pound ground breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 8 slices sourdough bread
  • 4 tablespoons soft butter (divided)

Instructions

  1. In a non-stick skillet, cook the ground sausage over medium heat until browned and crumbled. Transfer to a bowl and set aside.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until set but still creamy. Combine cooked sausage with scrambled eggs.
  3. Butter one side of each slice of sourdough bread. In the skillet, place one slice butter-side down, layer with cheese, then the egg-sausage mixture, another slice of cheese, and top with another bread slice butter-side up.
  4. Cook until golden brown on both sides (about 3-4 minutes per side). Serve hot.
