  • 4 bell peppers, medium diced
  • 1 yellow onion, medium diced
  • 2 tablespoons olive oil, divided
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 pounds ground chicken, extra lean if preferred
  • 1 (20 oz) can pineapple in 100% juice
  • 1 (4 oz) can chipotle peppers in adobo
  • 4 cloves garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 18 large eggs, slightly beaten
  • Cooking spray, oil, or butter (for scrambling)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 450°F. Toss quartered potatoes with olive oil, salt, and pepper; roast on a half-sheet pan for 15 minutes.
  2. Mix diced peppers and onions with remaining olive oil and seasonings; add to potatoes after 15 minutes. Roast for an additional 25–30 minutes until tender.
  3. In a skillet over medium-high heat, brown ground chicken. Blend pineapple, chipotle peppers, garlic, and spices in a food processor; pour over cooked chicken and simmer.
  4. Scramble beaten eggs in a nonstick skillet over medium-low heat until cooked through.
  5. Assemble bowls with chipotle chicken, scrambled eggs, and roasted veggies.
