  • 1 clove garlic (finely diced)
  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt vegan butter in a large pot over medium heat until bubbling.
  2. Sauté chopped onions and garlic for 5-7 minutes until translucent.
  3. Stir in flour to form a roux.
  4. Gradually whisk in vegetable broth and rice milk until smooth.
  5. Bring mixture to a boil, then reduce heat.
  6. Add chopped broccoli and carrots; cook for about 10 minutes until tender.
  7. Stir in vegan cheddar cheese until melted.
  8. Blend about 1/4 of the soup for creaminess; return to pot and mix well.
  9. Season with salt and pepper before serving.
