Ingredients
- 2 sweet potatoes
- 1 cup onions, chopped
- 2 bell peppers, chopped
- 1 1/2 cups rice, uncooked
- Black beans from the Mexican Fiesta Cauliflower Rice
- 1 avocado, cubed
- 1/3 cup tahini
- 1 tablespoon garlic powder
- Juice of 1 lemon
- 1/8 cup or more water to thin
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- Salt, pepper to taste
Instructions
- Cook rice according to package instructions until fluffy.
- Preheat oven to 415°F (213°C). Toss sweet potato cubes with olive oil, Cajun seasoning, salt, and pepper on a parchment-lined baking sheet. Roast for 20 minutes until tender.
- In a skillet over medium heat, sauté garlic with optional onions and bell peppers in oil. Stir in drained black beans and keep warm.
- Assemble the bowl by layering rice, roasted sweet potatoes, black beans, and avocado. Drizzle with tahini sauce and your choice of hot sauce.
