  • 6 bone-in, skin-on chicken thighs
  • 1½ cups long-grain white rice
  • 1½ cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 2 teaspoons fresh thyme
  • 1 Scotch bonnet pepper (or habanero)

Instructions

  1. 1. Season chicken thighs with salt, black pepper, paprika, allspice, garlic powder, and onion powder.
  2. 2. In a large pot, heat vegetable oil over medium heat and sauté onions until translucent. Add garlic and cook until fragrant.
