- 1/2 cup melted butter
- 1 cup light brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded carrots
- 4 ounces cream cheese
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a bowl, mix melted butter and brown sugar until smooth. Stir in the egg and vanilla.
- In another bowl, combine flour, cinnamon, baking powder, and salt. Gradually add to wet mixture until just blended. Fold in shredded carrots.
- Pour batter into the pan and bake for 30–35 minutes until a toothpick comes out clean.
- For the cream cheese topping: Beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla.
- Spread topping over partially baked bars and return to oven for an additional 10–15 minutes until set.
- Allow to cool before slicing into squares.
