Description

Carrot Cake Bars are a scrumptious twist on classic carrot cake, offering the same rich flavors in a convenient bar form.


Ingredients

  • 1/2 cup melted butter
  • 1 cup light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a bowl, mix melted butter and brown sugar until smooth. Stir in the egg and vanilla.
  3. In another bowl, combine flour, cinnamon, baking powder, and salt. Gradually add to wet mixture until just blended. Fold in shredded carrots.
  4. Pour batter into the pan and bake for 30–35 minutes until a toothpick comes out clean.
  5. For the cream cheese topping: Beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla.
  6. Spread topping over partially baked bars and return to oven for an additional 10–15 minutes until set.
  7. Allow to cool before slicing into squares.
