- 8 ounces tortellini
- 1 tablespoon olive oil
- 1 pound ribeye steak, thinly sliced
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1 cup provolone cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large pot, boil salted water and cook the tortellini according to package instructions until al dente (3-5 minutes). Drain and set aside.
- Heat olive oil in a skillet over medium-high heat. Add the ribeye steak and cook for about 3-4 minutes until browned. Remove from skillet.
- In the same skillet, sauté onions and bell peppers for about 5-6 minutes until softened. Add garlic and cook an additional minute.
- Season with salt and pepper. Pour in beef broth and simmer for 2-3 minutes to reduce slightly.
- Stir in heavy cream and let it thicken for another 2-3 minutes before adding provolone cheese until melted.
- Return the cooked steak to the skillet and toss with the drained tortellini until well coated in sauce. Cook for an additional 2-3 minutes to heat through.
