  • 1 head cauliflower, chopped into florets
  • 2 slices bacon, chopped
  • 1 tablespoon olive oil
  • ¼ cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside.
  3. Boil water in a saucepan; add cauliflower florets and cook for 5 minutes. Drain and set aside.
  4. In the same skillet, sauté diced onion and minced garlic in olive oil for 3–5 minutes.
  5. Whisk together almond milk and flour until smooth, then add to the skillet and bring to a low boil.
  6. Stir in cheeses and salt until melted and smooth.
  7. Combine cauliflower with cheese sauce until coated, then transfer to a baking dish.
  8. Top with bacon and bake for 20 minutes until golden brown.
