Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry)
- 2 cups shredded cheese
Instructions
- In a large skillet over medium-high heat, heat olive oil and cook ground beef and onion until beef is browned and onions are translucent (about 8-10 minutes). Drain excess grease.
- Stir in minced garlic and taco seasoning; cook for about 30 seconds until fragrant.
- Add beef broth, Rotel, and tomato paste; bring to a boil. Stir in dry rice.
- Cover and simmer on low heat for 15 minutes without lifting the lid.
- Sprinkle shredded cheese over the top; cover and cook for another 5 minutes until melted.
