- 1 cup light brown sugar, packed
- 2 egg yolks
- 2 tsp vanilla extract
- 1/2 cup canned pumpkin puree
- 1 3/4 cups all-purpose flour
- 1 tbsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until smooth.
- Mix in egg yolks one at a time and then add vanilla.
- Stir in the pumpkin puree until combined.
- In another bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt; gradually add this mixture to the wet ingredients.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for about 12 minutes until edges are lightly golden. Let cool before transferring to wire racks.
