Description

Chewy Pumpkin Cookies are the perfect fall treat, combining the warm flavors of pumpkin and spices into a soft, melt-in-your-mouth delight.


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until smooth.
  3. Mix in egg yolks one at a time and then add vanilla.
  4. Stir in the pumpkin puree until combined.
  5. In another bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt; gradually add this mixture to the wet ingredients.
  6. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for about 12 minutes until edges are lightly golden. Let cool before transferring to wire racks.
