- 2 cups diced rotisserie chicken or 2 boneless skinless chicken breasts
- 1¼ cups uncooked white long-grain rice
- 2 cups fresh or thawed broccoli florets
- 10.5 oz cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 cup crushed Ritz crackers
- 2 tbsp butter
- 2½ cups chicken broth
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
