  • 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups uncooked white long-grain rice
  • 2 cups fresh broccoli florets (or thawed frozen broccoli)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 2 tablespoons butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Cut chicken into bite-sized pieces; season with Italian seasoning, salt, and pepper.
  2. In a large pot, melt butter over medium heat. Cook chicken for about 5 minutes until golden brown; set aside.
  3. In the same pot, combine chicken broth, olive oil, and rice. Bring to a boil, reduce heat to simmer, cover, and cook for about 6 minutes.
  4. Add broccoli to the pot; cover and cook for another 9 minutes or until rice is tender and liquid is absorbed.
  5. Stir in cooked chicken (or rotisserie), cream of chicken soup, milk, sour cream, half of the cheddar cheese until well combined.
  6. Transfer mixture to a greased casserole dish; top with remaining cheddar cheese and cover with foil. Bake for 15 minutes.
  7. Mix melted butter with crushed Ritz crackers; sprinkle over casserole after removing foil and bake uncovered for an additional 10 minutes.
