This Chicken Cheesesteak Skillet is a quick and delicious twist on the iconic Philly cheesesteak, perfect for busy weeknights.

- 2 tablespoons olive oil
- 1 yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1¼ pounds boneless skinless chicken breasts, thinly sliced
- 1½ teaspoons Italian seasoning
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded provolone cheese
- Fresh parsley for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sauté the onion and bell peppers until soft (about 6–8 minutes). Set aside.
- Add the remaining olive oil to the skillet. Cook the sliced chicken with Italian seasoning and smoked paprika for about 5–7 minutes until fully cooked.
- Return the sautéed veggies to the skillet and mix well with the chicken. Top with shredded provolone cheese and cover until melted (about 2 minutes).
- Serve warm as is or alongside hoagie rolls, rice, or greens.
