  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 3 boneless, skinless chicken breasts, cut into long strips
  • 1 medium red bell pepper, cut into long strips
  • 1 medium green bell pepper, cut into long strips
  • 2 large onions, sliced
  • 2 tablespoons butter
  • 1 cup Tex-Mex cheese
  • 8 tortillas

Instructions

  1. Season chicken strips with fajita seasoning.
  2. Heat olive oil in a skillet over medium heat, add chicken, and cook until charred and fully cooked (5-10 minutes). Remove and set aside.
  3. In the same skillet, add more olive oil, sauté onions until translucent, then add bell peppers and remaining seasoning. Cook until tender.
  4. Return chicken to the skillet, mix well, and cook for another minute.
  5. In a clean skillet, melt butter over medium heat. Place one tortilla in the skillet; fill half with chicken mixture and cheese. Fold or place another tortilla on top.
  6. Cook until golden brown (1-2 minutes per side) and cheese is melted. Repeat with remaining ingredients.
  7. Serve hot with salsa and sour cream.
