  • 1 1/2 lb chicken breast
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 1 1/2 tsp paprika
  • 12 oz gluten-free farfalle pasta
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese

Instructions

  1. Boil water in a large pot and cook the gluten-free farfalle pasta until al dente.
  2. In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and pepper. Season the chicken breasts with this mixture.
  3. In a large skillet, heat olive oil over medium heat and sear the chicken for about 5 minutes on each side until golden brown. Lower heat and cover to cook for an additional 10-12 minutes until cooked through.
  4. Remove the chicken from the skillet. In the same skillet, melt butter and add shallots, garlic powder, and Italian seasoning; simmer for one minute.
  5. Stir in flour, then add chicken broth and heavy cream; whisk until smooth.
  6. Gradually mix in shredded Parmesan until melted.
  7. Toss the cooked pasta in the sauce; adjust consistency with reserved pasta water if necessary.
  8. Slice the chicken and serve atop or mixed into the pasta.
