  • 1 serrano pepper, finely diced
  • 1.5 pounds boneless chicken thighs
  • 4 garlic cloves, minced
  • 2-inch piece of fresh ginger, grated
  • 23 tablespoons curry powder
  • 1 (14.5 oz) can crushed tomatoes
  • 1.5 pounds sweet potatoes, cubed
  • 1 (13.5 oz) can coconut milk
  • 3 cups baby spinach

Instructions

  1. Heat coconut oil in a large sauté pan over medium-high heat. Add onion and serrano pepper; sauté until softened.
  2. Add chicken and cook until lightly browned.
  3. Stir in garlic, ginger, curry powder, and other spices; cook for about a minute.
  4. Mix in crushed tomatoes, sweet potatoes, and coconut milk. Bring to a gentle boil, reduce heat to simmer, cover, and cook for about 15 minutes until sweet potatoes are tender.
  5. Stir in spinach; cover and cook an additional 5 minutes until wilted.
  6. Adjust seasoning with salt and pepper; serve hot over rice or with flatbread.
