  • ¼ teaspoon ground black pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon finely minced ginger
  • 1 teaspoon finely minced garlic
  • ½ cup cake flour
  • ½ cup cornstarch
  • 1 egg (beaten)
  • ½ cup ice-cold water
  • Vegetable oil (for deep frying)

Instructions

  1. Pound chicken breast to even thickness and cut into strips.
  2. Season chicken with salt, pepper, soy sauce, ginger, and garlic; let it sit.
  3. In a bowl, sift together cake flour, cornstarch, and baking soda. Add beaten egg and cold water; mix gently.
  4. Heat oil in deep fryer or Dutch oven to 350°F (175°C).
  5. Coat each chicken strip in batter and fry in batches for about 4 minutes until golden brown.
  6. Drain excess oil on paper towels before serving.
