  • 4 boneless, skinless chicken thighs
  • 5 cups romaine lettuce, washed and dried
  • 1 red bell pepper, sliced
  • 1 large mango, diced
  • 1 avocado, diced
  • Fresh cilantro
  • ½ cup freshly squeezed lime juice
  • 4 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 2 teaspoons honey
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1¼ teaspoons salt

Instructions

  1. In a bowl, whisk together the marinade ingredients: olive oil, lime juice, cilantro, garlic, honey, brown sugar, cumin, and salt. Reserve one-third of the marinade for dressing.
  2. Marinate the chicken in the remaining mixture for at least 15 minutes (up to 2 hours for enhanced flavor).
  3. Grill the marinated chicken over medium-high heat for 5–6 minutes per side until cooked through.
  4. Sauté or grill the sliced red peppers until tender.
  5. Prepare the salsa by combining diced mango, avocado, and green onion with a bit of reserved dressing.
  6. Assemble the salad by layering romaine leaves, grilled peppers, salsa, and sliced chicken on top. Drizzle with remaining dressing before serving.
