- 4 boneless, skinless chicken thighs
- 5 cups romaine lettuce, washed and dried
- 1 red bell pepper, sliced
- 1 large mango, diced
- 1 avocado, diced
- Fresh cilantro
- ½ cup freshly squeezed lime juice
- 4 cloves garlic, crushed
- 3 tablespoons olive oil
- 2 teaspoons honey
- 1 teaspoon brown sugar
- 1 teaspoon ground cumin
- 1¼ teaspoons salt
Instructions
- In a bowl, whisk together the marinade ingredients: olive oil, lime juice, cilantro, garlic, honey, brown sugar, cumin, and salt. Reserve one-third of the marinade for dressing.
- Marinate the chicken in the remaining mixture for at least 15 minutes (up to 2 hours for enhanced flavor).
- Grill the marinated chicken over medium-high heat for 5–6 minutes per side until cooked through.
- Sauté or grill the sliced red peppers until tender.
- Prepare the salsa by combining diced mango, avocado, and green onion with a bit of reserved dressing.
- Assemble the salad by layering romaine leaves, grilled peppers, salsa, and sliced chicken on top. Drizzle with remaining dressing before serving.
