Ingredients
- 5.2 oz dry noodles (your choice)
- 1/2 cup chopped fresh cilantro

- 1 tsp curry powder
- 1/2 tbsp chili powder (optional)
- 1/4 cup oil (olive oil recommended)
- 1.5 to 2 tbsp vegetarian mushroom oyster sauce
- 1 tbsp dark soy sauce
- 2 tbsp lime juice
Instructions
- Cook the noodles according to package instructions but undercook slightly. Rinse under cold water and set aside.
- In a large heatproof bowl, combine cilantro, garlic, shallot, curry powder, sugar, and optional chili powder.
- Heat oil in a pot over medium heat until hot; test with garlic for sizzling.
- Pour hot oil over the fresh mixture and stir well.
- Add mushroom oyster sauce, dark soy sauce, and lime juice; mix thoroughly.
- Toss in the cooked noodles until evenly coated with the sauce.
- Serve hot, optionally garnished with chili oil or extra cilantro.
