  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 cup gluten-free all-purpose flour
  • 1 cup rolled oats
  • 4 tbsp melted vegan butter (for swirl)
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash bananas and mix in melted vegan butter, maple syrup, almond milk, and vanilla.
  3. In another bowl, whisk together baking powder, baking soda, cinnamon, salt, flour, and oats. Gradually combine with the wet ingredients.
  4. For the cinnamon swirl, mix melted vegan butter with brown sugar and cinnamon.
  5. Layer half of the banana bread batter in a greased loaf pan; add half of the cinnamon swirl mixture. Repeat with remaining batter and swirl.
  6. Bake for about 45 minutes or until a toothpick comes out clean.
  7. Prepare cream cheese glaze while baking by mixing powdered sugar with melted vegan butter and softened cream cheese until smooth.
  8. Cool for 10 minutes before transferring to a wire rack; drizzle with glaze before slicing.
