Ingredients
- 1 pound salmon fillets (or preferred fish)
- ⅓ cup olive oil
- 1 red bell pepper (sliced)
- 1 serrano or jalapeno pepper (sliced)
- ½ cup chopped cilantro
- 2 carrots (sliced)
- 6 garlic cloves (halved)
- 1 tablespoon tomato paste
- 1 tablespoon sweet paprika
- ½ tablespoon hot paprika (adjust to taste)
- 1 teaspoon coarse salt
- ½ teaspoon cumin
- ¼ teaspoon turmeric
- ¾ to 1 cup water
Instructions
- Heat olive oil in a large sauté pan over medium heat. Sauté bell pepper, serrano pepper, carrots, and garlic for about 3 minutes.
- Stir in tomato paste and spices; cook for another 3 minutes.
- Add half of the cilantro and ¾ cup water; cover and simmer for 12–15 minutes until veggies are tender.
- Season salmon with salt, place in the pan, spoon sauce over it, and cover again. Cook on low flame for 20–25 minutes.
- Garnish with lemon slices before serving.
