Ingredients

  • 1 pound salmon fillets (or preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper (sliced)
  • 1 serrano or jalapeno pepper (sliced)
  • ½ cup chopped cilantro
  • 2 carrots (sliced)
  • 6 garlic cloves (halved)
  • 1 tablespoon tomato paste
  • 1 tablespoon sweet paprika
  • ½ tablespoon hot paprika (adjust to taste)
  • 1 teaspoon coarse salt
  • ½ teaspoon cumin
  • ¼ teaspoon turmeric
  • ¾ to 1 cup water

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Sauté bell pepper, serrano pepper, carrots, and garlic for about 3 minutes.
  2. Stir in tomato paste and spices; cook for another 3 minutes.
  3. Add half of the cilantro and ¾ cup water; cover and simmer for 12–15 minutes until veggies are tender.
  4. Season salmon with salt, place in the pan, spoon sauce over it, and cover again. Cook on low flame for 20–25 minutes.
  5. Garnish with lemon slices before serving.
