  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 1 lb Yukon Gold potatoes, cut into pieces
  • 4 carrots, sliced
  • 1 can green beans, drained
  • 3 tablespoons tomato paste
  • 1 can diced tomatoes with juices
  • 1 can black-eyed peas, drained and rinsed
  • 1 can corn, drained
  • 46 cups beef broth (to preference)
  • Italian seasoning
  • smoked paprika
  • chili powder

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery until soft (2–3 minutes), then add garlic and cook until fragrant (1–2 minutes).
  2. Add ground beef and brown thoroughly.
  3. Stir in potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, corn, and seasonings.
  4. Pour in 4 cups of beef broth; add more for desired consistency.
  5. Bring to a boil. Reduce heat and simmer covered for 14–16 minutes or until potatoes are tender. Adjust seasoning as needed.
