  • 1 teaspoon fresh lemon thyme (or regular thyme)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Prepare the asparagus by washing and chopping it into small pieces, reserving a few tips for garnish.
  2. In a Dutch oven over medium heat, melt the butter and sauté onions and asparagus with salt and pepper until softened (about 3-4 minutes). Add garlic and cook for another 10-15 seconds.
  3. Add the broth, bring to a simmer, and cook on medium-low heat for 15 minutes.
  4. Blend the mixture until smooth using a blender, then return it to the pot.
  5. Stir in cream, lemon juice, and thyme; simmer uncovered until thickened.
  6. Garnish with reserved asparagus tips and serve warm.
