  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 1/2 cups whole milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet over medium-high heat, sear chicken in olive oil for 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In a saucepan, bring chicken broth and salt to a boil; add rice and simmer covered for 15-18 minutes.
  4. In the same skillet where you cooked the chicken, melt butter over medium heat and whisk in flour until golden.
  5. Gradually add milk and broth while whisking to form a smooth sauce. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  6. Return chicken to skillet, spoon sauce over it, cover, and simmer on low for 10 minutes.
  7. Serve over rice garnished with fresh parsley.
