- 3 garlic cloves ( minced)
- 1/4 cup flour
- 6 to 8 cups chicken broth
- 6 oz pasta (small shells recommended)
- 1 cup heavy whipping cream
- 2 1/2 to 3 cups fresh spinach
- Grated Parmesan cheese (to taste)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper. Cook until browned (4–5 minutes).
- Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until translucent (3–4 minutes).
- Sprinkle flour over the mixture and stir well to combine.
- Gradually whisk in chicken broth while stirring continuously.
- Bring to a boil; add pasta and seasonings. Cover and simmer for about 20 minutes until cooked through.
- Stir in cream, spinach, and Parmesan cheese; simmer for an additional five minutes.
- Adjust seasoning if necessary before serving.
