Ingredients

  • 2 lbs Yukon Gold or Russet potatoes
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in the baking dish and drizzle half of the balsamic mixture over them.
  4. Add the remaining potato slices and pour the rest of the glaze on top; press down gently.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  6. Let cool for 5 minutes before slicing into wedges.
