  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or olive oil)
  • 1 whole head garlic
  • 1 tablespoon fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • Flaky sea salt for finishing

Instructions

  1. 1. Preheat your oven to 450°F and place an empty roasting pan inside.
  2. 2. Rinse potatoes under cold water; then boil them in salted water with baking soda until fork-tender (about 25 minutes). Drain and let dry.
  3. 3. Melt duck fat in the hot roasting pan. Roughen up the edges of the dried potatoes and add them to the pan. Season with salt and pepper, adding the head of garlic cut-side down.
  4. 4. Roast for about 55-60 minutes, tossing every 20 minutes until golden brown.
  5. 5. Remove garlic, mash cloves with rosemary and olive oil, then mix back into potatoes for added flavor before serving.
