  • 8 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • ¾ cup ketchup
  • ⅓ cup soy sauce
  • ⅓ cup honey
  • 3 tablespoons minced garlic
  • ½ teaspoon onion powder
  • ¼ teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ¼ teaspoon dried mustard
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken with salt and pepper. Sear skin-side down until golden brown. Transfer to the Crock Pot skin-side up.
  2. Prepare the sauce: In a bowl, whisk together ketchup, soy sauce, honey, minced garlic, onion powder, thyme, parsley, and dried mustard. Pour over the chicken.
  3. Cook: Cover and cook on HIGH for 3 hours or LOW for 5 hours until chicken is tender.
  4. Serve: Remove chicken from the pot and serve with the sauce drizzled on top.
