  • 4 boneless chicken thighs
  • 1/2 lemon (zest and juice)
  • 1/4 cup chicken broth
  • 1/2 cup Jasmine rice (uncooked)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup water
  • 1 clove garlic (or 1 tsp minced garlic)

Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, combine lemon zest, juice, and chicken broth; set aside.
  3. Mix garlic powder, onion powder, salt, pepper, crushed red pepper flakes, paprika, and Italian seasoning in a small ramekin.
  4. Pour the lemon mixture over the chicken and sprinkle with seasonings. Add minced garlic.
  5. Cook on high for 2-3 hours or low for 6-8 hours until chicken is tender.
  6. About 20 minutes before serving, stir in uncooked Jasmine rice and water; cover and cook until rice is tender.
