Description

Ingredients

  • 1 lb Roma tomatoes
  • 1 English cucumber
  • 1/2 medium red onion (sliced)
  • 2 avocados (diced)
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • Sea salt and black pepper
  • 1/4 cup chopped cilantro

Instructions

  1. Wash all vegetables under cool water.
  2. Dice the Roma tomatoes and slice the cucumber and red onion.
  3. Halve the avocados, remove the pit, scoop out the flesh, and dice them.
  4. Finely chop the cilantro.
  5. In a large bowl, combine all ingredients and drizzle with olive oil and lemon juice.
  6. Toss gently to mix everything together.
  7. Just before serving, season with sea salt and black pepper.
