  • 2 pounds Russet or Yukon Gold potatoes
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream

  • Salt

Instructions

  1. Peel and chop the potatoes, then boil in salted water until fork-tender (15-20 minutes).
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Drain the potatoes and return them to low heat to dry out excess moisture.
