- 1 cup (120 g) confectioners’ sugar (sifted)
- 1/2 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a mixer bowl, beat sugars and vegetable oil for 1 minute; add eggs and vanilla extract, mixing until combined.
- Gradually add dry ingredients to the wet mixture until just blended; fold in shredded carrots.
- Fill cupcake liners two-thirds full with batter and bake for 20–22 minutes or until a toothpick comes out clean.
- For frosting, beat softened cream cheese and butter until smooth; gradually add confectioners' sugar and mix until creamy.
