- 500 g (4 cups) bread flour
- 7 g (2 1/4 teaspoons instant yeast)
- 2 teaspoons kosher salt
- 480 g (2 cups) lukewarm water
- 6 tablespoons high-quality extra-virgin olive oil (divided)
- Flaky salt (for topping)
- 1 tablespoon chopped rosemary (optional)
Instructions
- In a large mixing bowl, combine the bread flour, instant yeast, and kosher salt.
- Create a well in the center and pour in the lukewarm water. Stir until a shaggy dough forms.
- Drizzle 30 g of olive oil over the dough and rub it in until coated. Cover with plastic wrap and refrigerate for 18-72 hours.
- Preheat your oven to 425°F (218°C). Grease your baking pan with non-stick spray and drizzle with olive oil.
- Remove the dough from the fridge, shape it into a ball, and place it in the prepared pan. Allow it to rise uncovered for 3-4 hours until doubled in size.
- Once risen, drizzle remaining olive oil on top, create dimples using your fingers, and sprinkle with flaky salt and rosemary.
- Bake for 25–30 minutes until golden brown. Let cool before slicing.
