  • 500 g (4 cups) bread flour
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 teaspoons kosher salt
  • 480 g (2 cups) lukewarm water
  • 6 tablespoons extra-virgin olive oil (divided)
  • Flaky salt (for topping)
  • Optional: 1 tablespoon chopped rosemary

Instructions

  1. In a large mixing bowl, combine bread flour, yeast, and salt. Create a well in the center and pour in lukewarm water. Stir until a shaggy dough forms.
  2. Drizzle 30 g (2 tablespoons) olive oil over the dough and gently coat it. Cover with plastic wrap and refrigerate for 18 to 72 hours.
  3. Preheat your oven to 425°F (218°C). Spray a 9×13-inch baking pan with non-stick spray and drizzle remaining olive oil in the center.
  4. Remove dough from the refrigerator and shape it into a ball. Place it in the prepared pan, allowing it to rise uncovered for 3-4 hours.
  5. Create deep dimples in the dough using your fingers, drizzle with olive oil, add optional rosemary, and sprinkle flaky salt on top.
  6. Bake for 25-30 minutes until golden brown and slightly pulling away from the sides of the pan.
  7. Cool briefly before transferring to a wire rack to slice and serve.
