  • 2 servings dry instant ramen noodles (approx. 140 g)
  • 10 oz extra firm tofu or vegetables/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 23 tbsp sugar (or liquid sweetener)
  • 2 tbsp rice vinegar
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves minced garlic (optional)

Instructions

  1. Mix all sauce ingredients in a bowl; set aside.
  2. Boil water in a pot; add ramen noodles and cook until chewy.
  3. Drain noodles and rinse if desired.
  4. In a non-stick pan, sauté veggies or tofu until cooked.
  5. Add the sauce to the pan; simmer for about 3 minutes.
  6. Stir in the noodles and cook until they absorb some sauce.
  7. Adjust seasonings as needed and serve hot with optional toppings.
