  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth
  • 2 (4 oz) cans diced green chilies
  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 2 cups cooked chicken, shredded
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup corn (frozen or fresh)
  • Fresh cilantro and shredded cheese for garnish

Instructions

  1. In a large pot over medium-high heat, sauté the onion in olive oil until softened. Add garlic and cook for an additional 30 seconds.
  2. Stir in chicken broth, diced green chilies, cumin, cayenne pepper, oregano, paprika, lime juice, salt, and pepper.
  3. Drain and rinse the great northern beans. Blend some beans with a splash of broth if desired for creaminess.
  4. Add both whole and pureed beans along with corn to the pot. Simmer uncovered for about 15 to 30 minutes.
  5. Remove from heat and stir in sour cream or Greek yogurt followed by shredded chicken until well combined.
  6. Serve in bowls topped with cilantro, cheese, avocado slices, and tortilla chips.
