  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 and 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold & cubed
  • 1/4 cup cold water
  • 1 large egg (for egg wash)

Instructions

  1. In a saucepan over medium heat, combine cherries, lemon juice, vanilla extract, sugar, and cornstarch. Simmer for about 10 minutes until thickened. Cool completely.
  2. Preheat oven to 425°F (220°C) and butter a 9-inch pie plate.
  3. In a mixing bowl, whisk flour and sugar; cut in cold butter until crumbly. Gradually add cold water until combined. Chill dough for at least 30 minutes.
  4. Roll out one dough ball into a circle larger than the pie plate; transfer to the plate. Pour cooled cherry filling into crust.
  5. Roll out the second dough ball, place it over the filling, seal edges by crimping, and cut slits for venting.
  6. Brush top crust with egg wash and bake on a rimmed baking sheet for about 60 minutes or until golden brown. Cool before serving.
