Ingredients
- 6 cups fresh cherries, pitted
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 2 and 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold & cubed
- 1/4 cup cold water
- 1 large egg (for egg wash)
Instructions
- In a saucepan over medium heat, combine cherries, lemon juice, vanilla extract, sugar, and cornstarch. Simmer for about 10 minutes until thickened. Cool completely.
- Preheat oven to 425°F (220°C) and butter a 9-inch pie plate.
- In a mixing bowl, whisk flour and sugar; cut in cold butter until crumbly. Gradually add cold water until combined. Chill dough for at least 30 minutes.
- Roll out one dough ball into a circle larger than the pie plate; transfer to the plate. Pour cooled cherry filling into crust.
- Roll out the second dough ball, place it over the filling, seal edges by crimping, and cut slits for venting.
- Brush top crust with egg wash and bake on a rimmed baking sheet for about 60 minutes or until golden brown. Cool before serving.
